We’re going to the chapel and we’re going to get married”. Today is a special day in my world! One of my kids is getting married! I did not give birth to this young man, he was born in my heart, not beneath it. Cory has been one of Jonathan’s closest friends since the third grade, and today he’s marrying one of the nicest young women I have ever had the pleasure knowing. From their first date as freshmen in high school, till now, you knew they were meant to be.

In 2006 we uprooted our little family and moved here to McCleary Washington. It took a lot of getting used to being from big cities to a community of 1700 people. From the moment Jonathan started school and started making friends, it was as if Cory became one of our own. Family picnics, vacations, spring break trips to the beach, Cory was with us. I love this young man with my entire heart. A couple of months ago Cory and Kaylee asked me and another one of his extra moms, Linda, to make the appetizers for their wedding reception. We were more than happy to say yes and to help in any way we could to make their day wonderful. One of the appetizers we chose to do was one Tim and me had at our wedding reception, made by one of my mom's best friends, who’s been like another mom to me. Funny how life comes full circle! Jodi’s Tortilla Rollups

  • One 8 ounce block cream cheese
  • I small can dice chili’s
  • 1 package Burrito size flour tortillas
  • Tabasco sauce
  • Jar of salsa for dipping

Mix cream cheese and chili are together until combined. Add Tabasco to taste. (I like about a teaspoon)
Spread mixture thickly onto flour tortillas and roll tightly. Refrigerate overnight. Slice into one-inch pieces and arrange onto a serving tray, serve with salsa.
