Today’s recipe comes from one of my mom's friends. My recipe box is full of my mom's friend’s recipes. Each one is like a treasure, a little jewel hidden behind its category placard.
In 1984, my dad had a really horrible accident at his foundry. A grinding wheel broke apart and took the metal shelf completely off the machine and through my dad's leg. It was a miracle he didn’t bleed out, and the leg was even saved, but it was. It was a very long recovery for him, and it was a seriously crazy time for my family. I don’t remember who’s organized it, I just know that every night one of my parent's friends brought us dinner and dessert. Not just for a week, but for months.....and ohhhh could these women cook! It showed me that you take care of your own, be it family, or friends, you give when someone you know is in need. That simple act of kindness, of someone bringing you a meal when you are too exhausted to even think about eating, let alone, making a meal, is something I will never forget. I do it for friends and family whenever I can because I know how grateful we were during that difficult time. Little do these women know, what an impact they made in my life through their simple acts of kindness bringing us those meals. I was blessed my dad didn’t die that day, and that I got to have 15 more years with him before he did pass away. Ours was not always an easy relationship, maybe because we were so much alike, but he gave me so much. My work ethic and a sense to achieve and strive for what I want out of life come from him. He’s been gone 20 years now, and the anniversary of his passing just occurred. He has been at the forefront of my mind these past few days and the flood of memories that comes with it. Some good, some bad, but that is life. He was here long enough to see me become a decent cook, and although he wasn't supposed to have sweets, (he was a diabetic), he loved them. He really liked today’s recipe for Lemon Bars from my mom's friend Erna. It has the lightest pastry that just melts in your mouth. Lemon is one of my favorite flavors, I love it in just about anything!

Erna’s Lemon Bars

Pastry Crust

  • 2 cups flour
  • 1 cup cold butter
  • 1/2 cup powdered sugar
  • Mix as for pie dough. Place all three ingredients in a food processor and pulse until butter is the size of peas. Pour into the bottom of a 13X9 baking dish and press down evenly to form the crust. Bake at 350 degrees for 20 minutes.

Lemon Layer

  • 4 slightly beaten eggs
  • 2 cups of sugar
  • 6 tablespoons fresh lemon juice
  • Grated zest of one lemon
  • 1 teaspoon baking powder
  • 4 tablespoons flour
  • Mix all ingredients together and pour over baked pastry crust. Bake for 25 minutes at 350 degrees. Sprinkle with powdered sugar while still warm. Cool completely before cutting.
