When I look at my life and the people that are in it, I sometimes sit back and just say hmm. Most of us have families that are with us for a lifetime. Friends are different. Some friends I am very lucky to have had in my life since childhood, some are long gone. After I moved away from where I grew up, I found it hard to meet and become true friends with other women. Maybe because as we get older and wiser, we are more selective about who we let into our lives. I know I am not the only women on this earth who have been hurt by a friend, I do know I will not be the last. I also tend to keep my work life, and private life separate from each other with several incredible exceptions. I have a handful of people I have worked with over the years that have become my family. They come to holidays, and functions, they celebrate my children’s, and my accomplishments with me like they are related by blood! I love these people!
One of these friends is completely vegan in her diet, and since my sister in law is also a vegetarian, I am pretty familiar with their foods and their restrictions. I still giggle at my kid's reactions to eating tofu hot dogs for the first time. Yesterday was a friend's day! Food, friends, and lots of chatting. My heart always enjoys when I can put food on the table in my beautiful pottery, and share it with the people I love!
Today’s recipe is one I have been making for years, and instead of using ground beef, sour cream, and cheddar cheese, I used vegan chorizo, tofu sour cream, and vegan cheese. It’s very good with ground beef, but it was better with the vegan chorizo giving it a nice spicy kick. I will be making it this way from now on.

Kim’s Tex Mex Soup

  • 1 1/2 pounds lean ground beef browned and drained or two vegan chorizo’s chopped
  • 1 cup chopped green and red pepper
  • 2 cans black beans drained and rinsed
  • 1 cup chopped onion
  • 1 ear roasted corn, or you can sub 1/2 cups frozen
  • 1 packet onion soup mix
  • 1 can dice green chilies
  • 32 ounces veggie stock
  • 2 cups of water
  • I cup chopped fresh cilantro
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon cumin
  • 1/4 of a teaspoon cayenne pepper, a little more if you like it spicy
  • 1 teaspoon salt
  • 1 teaspoon dried oregano
  • 15 corn tortillas cut into large chunks

In a large 6-quart stockpot, over medium-high heat add olive oil, chopped peppers, and onion, sauté for five minutes. Add browned and drained ground beef, or chorizo, black beans, corn, cayenne, onion soup mix, diced green chilies, cilantro, cumin, salt, and oregano. Let simmer for an hour add chopped tortillas and simmer 1/2 hour. Garnish with grated cheese and sour cream.
