Stepping back in time... I’m in the car, I’m pretty sure my hair is in pigtails, we are driving to ocean shores... the air is warm, Neil Diamond is playing on the 8 track...we are heading through the last winding woods before we turn by the big blue building... there’s the Gitche Gumee sign... the white stone gates... we are here! Just a few more minutes and the people I love will be coming out the door to hug and kiss me! We are at grandma & grandpa's house, enveloped in the warm smell of the beach, and something yummy grandma has made for us to eat. This is just a small snippet of my childhood memory, but it looms so largely for me even now. Now that I’m old enough to be the grandma.
It’s Labor Day weekend, and before we say goodbye to summer, and start baking with freshly harvested apples and pumpkins. I want to share with you all, this light and fluffy dessert that is perfect for a warm evening. Grandma Pearl called it cheesecake, I don’t consider this a cake since it’s not baked, but one does not argue with one's grandma! It’s more of a lemony cheesy mousse. It’s so light and melts in your mouth delicious that you can eat the whole pan! It was a definite staple for my brother Jeff’s birthday and now is part, my sons, Jonathan’s as well.

Grandma Pearl’s Cheesecake

Filling

  • 1 package of lemon Jell-O
  • 1 cup boiling water
  • 1 can evaporate milk, VERY IMPORTANT: This has to be refrigerated and cold before using it! It will not stiffen up when whipped if not.
  • 1 - 8-ounce cream cheese
  • 1 cup of sugar
  • 1 large can cherry pie filling.

Crust

  • 2 cups graham cracker crumbs
  • 2 tablespoons powdered sugar
  • 4 tablespoons melted butter

Mix 1 cup boiling water with Jell-O and let cool and set up a little in the refrigerator for about 30 minutes. While it’s cooling, make a crust.

Crust:
Combine 2 cups graham cracker crumbs, 2 tablespoons powdered sugar, and 4 tablespoons melted butter together. Press into the bottom of your pan. Set aside

Filling:

  • Mix sugar and cream cheese and set aside.
  • Whip the evaporated milk until it’s stiff with firm peaks.
  • Mix Jell-O and cream cheese/sugar mixture together.
  • Fold whipped evaporated milk and Jell-o mixture together carefully so as not to deflate the whipped evaporated milk.
  • Spread mixture over crust and refrigerate until firm. Cover with canned cherry pie filling.
