It’s snowing here in my little part of the world today, and it’s very much like 24 years ago on Valentine’s Day. That was my due date for my son Matthew. It was my last O.B. appointment and my doctor was on a night call, so I saw someone else that day. Since she wasn’t my regular doctor she sent me across the street to the hospital for an ultrasound. It was snowing, I had my 4-year-old son with me and to make a long story short, I was induced. Valentine’s Day dinner was scraped, phone calls to husband and parents went out so someone could be there with me and my son. In true Matthew fashion, he made me wait. Now I’m not saying he’s always late... but.... at 12:42 am on the 15th of February, during a snowstorm this beautiful boy entered my life. I am truly blessed by this child. He is handsome, funny, talented, and every day I get to spend time with him is a treat. We just always have fun together. I love that we have gotten to the point in our lives where the child can now teach the parent things. He’s an amazing photographer and taught me a lot. Today’s recipe is Matthews's birthday cake request. At my house, on your birthday, mom makes whatever cake you want. This cake is always what Matthew wants. It is my grandma Pearls super-secret Fresh Apple Cake recipe. It is moist and delicious and gets better the longer it sits! Served with vanilla whipped cream, it is so delicious! Pearl’s Fresh Apple Cake

  • 1 1/2 cups vegetable oil
  • 2 cup of sugar
  • 2 eggs
  • 3 cups diced apples - I use Granny Smith
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 3 cups all-purpose flour

Cream sugar, oil, and water together add eggs and beat well. Add dry ingredients, and mix well. The batter will be very thick. Add apples and vanilla, mix together. Bake in a large greased baking dish at 350 for 45-50 minutes. The top should be a very pale golden brown. Check the center of cake with a toothpick until it comes out clean. I like to bake this a couple of days ahead of time and place in the refrigerator. It gets moister the longer it sits. Serve with fresh whip cream! From my heart to yours! Enjoy!
