May the fourth is a very special day at our house! This is my Pops Birthday!
I am very lucky because I have been fortunate to have two Dads.
First of all, I am a very protective kind of girl, I admit it. So back in 1994, when one of my mom's friends said to her, “Cheryl there is someone I think you should meet”. My initial reaction was, there is no one good enough for my mom, but, I was wrong! If you had to sit down and make a list of the perfect person to date your mom, what would be on that list? For me, it was honesty, patience, kindness, and handsome! My Pop is all of those and so much more. The first time we met, my brothers had told him that I was tough and was going to be hard to win over. I needed to know that this man was going to treat my mom the way she should be treated. In my wildest dreams, I could not have made a more perfect man for my mom! To watch my mom blossom, smile and laugh was the best gift this gentleman could have ever given me. But I got a whole lot more, I got a Dad, and my kids got a grandpa that matches my own Papa Joe! That’s a lot to live up too! We have spent so many amazing years together, it’s hard to remember a time when he was not in my life. I love you Pop!
So today, on this his 75th birthday, I am sharing a recipe that he and I both cannot stay out of when it’s sitting in front of us. We both love chocolate anything, and this is chocolate at its moistest! It is my mom Cheryl’s Texas Sheet Cake. It makes a lot and is perfect for summer potlucks, and family get-togethers. Cheryls Texas Sheet Cake

  • Batter
  • 1 cup butter
  • 1 cup of water
  • 5 tablespoons unsweetened Hershey’s cocoa
  • 2 cups of sugar
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 2 eggs
  • 1 cup sour cream


In a stand mixer combine sugar, flour, salt, baking soda, eggs, and sour cream.
On medium-high heat bring to a boil butter, water and cocoa. Add boiled mixture to batter and blend until smooth.
Line a 17x13 jelly roll pan with parchment paper and pour batter mixture onto it. Bake in a 350-degree oven for 20 minutes. Let cool completely before frosting.

Frosting

  • 1/2 cup butter
  • 6 tablespoons unsweetened Hershey cocoa
  • 6 tablespoons milk
  • 2 1/2 teaspoons vanilla
  • 4 cups powdered sugar

In a saucepan combine butter, cocoa and milk till butter are fully melted. Remove from heat, and add vanilla and powdered sugar. Beat with a hand mixer until smooth. Add a few more tablespoons of powdered sugar if needed to firm it up a bit.
THIS IS VERY IMPORTANT: This frosting sets up very quickly so work fast! Spread immediately on completing cooled sheet cake. Let set, cut and serve! This is such an amazing recipe! I hope you all try it and enjoy it!
