Years ago I was having dinner at a great little spot in Vancouver Washington with a group of friends. I don’t even think it’s there anymore, but, that night instead of salad, I had the soup. It was listed as Steak and Mushroom Soup. Who doesn’t like Steak and Mushrooms? It was quite possibly the best soup I have ever had in my entire life! I’m Polish, so I have eaten a lot of soup! This is hands down my family’s favorite, my friend's favorite. (with the exception of my clam chowder, but that one doesn’t count, cuz it’s chowder, not soup!) I told my server how much I liked it and asked very brazenly if I could have the recipe. He said he would ask his grandpa since it was his recipe. The next thing I know this very nice little old man came out and gave me the recipe. Restaurant size quantities. So I make it just like that, in a huge stockpot, and I CAN it into quarts every year. THE BEST, I’m tired don’t want to cook a meal you can have after a long day. You can thicken it up and pour it over egg noodles, or as I do to make it stretch if I have to, add some orzo pasta to it.
I am giving you the recipe the same way I got it, you can cut it down for your family, or CAN it as I do! You will not be disappointed!

Steak and Mushroom Soup

  • 1/2 cup vegetable oil
  • 1 cooking spoon chopped garlic
  • 6 bay leaves
  • 1 teaspoon ground thyme
  • 1 tablespoon ground pepper
  • 1 teaspoon salt
  • 1 tablespoon savory ( it’s a green herb only could find it online)
  • 10 lbs chili grind beef chuck
  • 6 lbs sliced mushrooms
  • 2 packages brown gravy mix
  • 1 cup beef base
  • 3 gallons of water

Mix the water, gravy mix and beef base together and bring to a boil, then turn low to simmer.
In a separate pot, brown and drain the chili ground beef.
Add the oil, onions, garlic, bay leaves, thyme, savory, pepper, and salt. Cook 5 minutes so onions become translucent. Add flour and cook another 5 minutes. Add mushrooms cook until tender.
Combine meat mixture to the broth and simmer for 45 minutes.
