It’s September and that means we are heading right towards my favorite season of all, BAKING SEASON! I love to cook, but I have to admit, baking is what I love the most! Bread, cookies, pie, you name it, I’ll bake it! Is there something you would like me to make? Give me a suggestion, and let me see what I can come up with! I know this love of baking comes straight from my grandmas who were both amazing bakers. There is just that lovely warmth that comes to your home when you can smell bread or baked goods coming from the oven. Do you know what I mean? That smell that sends you right back to sitting on that stool in grandmas kitchen, by the big window, pink rotary dial phone cord hanging in the way of you getting another cookie off the white Formica countertop with the silver flecks in it.
Since I was fairly comatose when I got home from Poland a few weeks ago, I wasn’t awake long enough to make my husband a birthday cake. I rectified that today and baked his favorite, pineapple upside-down cake. This recipe is so moist and delicious! It looks just beautiful on this amazing True Blue Cakestand.

Tim’s favorite Pineapple Upsidedown Cake

Ingredients

  • 1/2 cup butter (1 stick), melted
  • 1/2 cup packed brown sugar
  • 1 Can pineapple rings in 100% juice (reserve the juice)
  • 1 jar maraschino cherries
  • 1 Box yellow cake mix
  • 1 Small box instant vanilla pudding
  • 3 eggs
  • Vegetable oil
  • Milk

Directions
Preheat the oven to 350 degrees F.
Prepare your bundt pan by generously applying pan release (recipe below) or non-stick spray. I always use the recipe below, I’ve never had a bundt stick!
Melt the butter and pour it into the bottom of the pan. Sprinkle the brown sugar evenly around the bottom.
Cut the pineapple rings in half and alternate with the maraschino cherries around the bundt pan as shown in the picture. Set aside.
Combine together the cake mix and pudding mix in the bowl of your stand mixer. Drain the pineapple juice into a measuring cup and add enough milk to make 1 Cup of liquid. Add the eggs, and the amount of oil called for on the cake mix box.
Carefully pour the batter over the fruit. Place the bundt pan on a baking sheet and bake as instructed for a bundt cake on the cake mix box. I found it takes longer. The cake is done when a toothpick comes out clean.
Cool for 15 minutes in the pan. Slide a knife around the edges including the inner ring.
Invert the cake onto a cake stand or serving platter.

Cake release recipe

  • Equal parts
  • Vegetable oil
  • Flour
  • Vegetable shortening
  • I use 1/3 cup of each...mix until smooth and use a pastry brush to coat the inside of the pan.

Store the rest in an airtight container in the fridge.
