These last few weeks certainly have not gone according to plan, however, it has shown me very humbly what I have to be thankful for. I have the best family and friends! Last evening after a wonderful family outing and meal, I sat down and plugged in our old family home movies to show my visiting cousin Sylwia. There is 8 millimeter, 1960’s, black and white, some color, no sound, is where I come from. Every great grandparent, grandparent, auntie, uncle, and cousin in dazzling, out of focus, a spotlight in your eyes glory! I see my Polish great grandparents dancing at my grandparents 25th wedding anniversary party, my dad when he was young, and healthy, and so very handsome, my beautiful mom in all her bouffant hair glory! But what I see most, is all of us together! Holidays and birthday parties, lake picnics, and beach outings all together eating, laughing, and loving one another. I am not going to lie, there are times I cry when I write these stories for you all because my love for family is overwhelming sometimes. I miss the family that is gone, I cherish each moment I get to spend with the those that are still here, and I pray that when I am just a pile of photographs and some old digital recordings that someone in my family is looking back and wishing I was still there. Having my cousin Sylwia here from Poland, connecting our family together, from half a world away will be in my heart for as long as I live. Sitting around my table, like generations before me, my family, sharing, laughing and eating. Some things just never change! I love that!
Today’s recipe is from my grandma Pearl, it’s her delicious zucchini bread recipe. Nothing really says summer like the first zucchini out of the garden. My youngest son Jonathan loves zucchini bread, and cannot wait for that time of year when I make it non stop! Pearl’s Zucchini Bread

  • 3 eggs
  • 1 cup of vegetable oil
  • 2 cups of sugar
  • 2 teaspoon vanilla
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 cup chopped walnuts/pecans
  • 3 cups all-purpose flour
  • 2 cups grated zucchini

Mix together eggs, sugar, and oil till light and fluffy. Sift all dry ingredients together except nuts and add to oil mixture. Add vanilla, nuts, and zucchini. Mix well.
Pour into two greased and floured loaf pans. Bake at 350 for 55 - 60 minutes or until a toothpick comes out clean!
