They say what doesn’t kill you makes you stronger. That is seriously being tested this week. Who of us hasn’t had one thing or another that throws a monkey wrench into our lives? I don’t know anyone who’s life has been a smooth ride. Everyone has had something happen one way or another. Personally, I’ve never really had anything that limited me physically. I’ve had little aches and pains along the way, but this week threw me for a loop. I’m on crutches, no weight at all on my right leg. I’m not even allowed to drive. Who knew the two steps into my house would be so devastatingly huge? I usually walk about six miles a day in my daily work life. I pull a pallet jack, loading and unloading trucks at work. I love to garden and play in the dirt. I’m very active normally. This week has given me another perspective. One I have always been acutely aware of, but never lived with myself. My younger brother has Muscular Dystrophy and has been limited most of his life. He is a true warrior! I have always thought I understood his plight, but how could I really, when I can do whatever I have always wanted too? Like getting up to get a drink or use the bathroom. That is now a major effort in a way I never really understood before. Have you ever been shopping and you see someone using one of the electric scooters or in their wheelchair? They are looking up at the shelves and you know they can’t reach something? I always stop and ask if I can help them get that item because I pray that someone is doing the same for my brother. If the bus you are catching has to spend those three extra minutes to let someone who is in a wheelchair get on, that is simply three more minutes you get to relax before you get to your destination, not three minutes that is going to ruin your life! I love my little brother! I know his life has been hard in ways I truly cannot fathom. My leg will heal, his disease has no cure, yet. We share so many interests, from music (The GoGo’s, I told you so!) to travel, and really good food. So many of his favorites I have shared with you all already. I’m sure this week's recipe will be added to his repertoire since it’s delicious and easy! It was also doable on crutches! Kim’s Avocado Toast

  • 1 piece rustic sourdough bread toasted
  • 7 large mushrooms sliced and sauté in butter, salt, and pepper to taste
  • 1/2 an avocado cubed
  • 1 tablespoon cottage cheese
  • A drizzle of fresh lemon juice
  • Dash cayenne pepper
  • Salt and Pepper to taste
  • 1 egg poached or very over easy
  • The drizzle of balsamic vinegar reduction (instructions below)

Balsamic reduction

  • 3/4 cup balsamic vinegar
  • Teaspoon brown sugar
  • Place in a pan on stovetop bring to a boil and then reduce heat to simmer. Cook till reduced by half. Store in an airtight container. Delicious on salad too!

Mix avocado with cottage cheese, smash the avocado a bit. Add lemon juice, salt pepper, and cayenne.

On your toasted sourdough, place sautéed mushrooms, top with add avocado mixture, and place the egg on top. The drizzle of balsamic vinegar over all.

I love this recipe! Since I do not eat gluten I omit the sourdough for myself, but my boys love it with the crusty bread!
