My heart is so happy today. It is so amazing to me how the simpleness of a get together with your friends can feed your soul.
Last night was one of those evenings that you just never want to see the end. Years ago I started having a holiday get together with some of my closest friends here in McCleary. We met because our children went to school together and played soccer together. When you spend that much time with a group of parents, you’re either really lucky and all get along or get on each other’s nerves. How lucky am I, that not only did I love spending time with these people, but we have become a family of our own. I look forward to this evening every year, and I am grateful that our kids all still want to be there too. We open bottles of wine, have dinner, and then we play the most competitive rounds of Catch Phrase you have ever seen.
This group of people is simply the best! We celebrate our kid's accomplishments together, provide support for each other in our times of need, welcome their girlfriends into our little family and we all just love one another! It is a wonderful tradition I hope we never stop doing. One day to include our children’s wives, and hopefully grandchildren. I, personally, can wait for the grandchildren for awhile!

I hosted this function for years at my home, but as a group, we decided to start taking turns hosting, so this year we went to Jim and Linda’s. It was a super fun time eating and laughing! We all share the load and bring appetizers, treats, and libations. It’s fun seeing what everyone makes, and trying new things.
Today’s recipe would be one that you can take to any large party function. It’s a super easy and delicious appetizer that you can make small, or double up for a large group of people. The recipe comes from one of my mom's friends, and I have a bunch of this woman’s recipes in my box. Betty is one of the best home cooks I know! She gave me a recipe for stroganoff, that was the first meal I ever made for my parents and grandparents after I moved out on my own. I still make it and will share it in a future post. I wasn’t even old enough to buy the white wine used in it at the time, so she bought it for me. I love this woman!

Betty’s Baked Layered Dip

  • 1 pound ground beef cooked and drained
  • 1 can refried beans
  • 1 small can diced chilies
  • 1 medium jar salsa
  • 1 can sliced olives
  • 1 1/2 cups shredded cheddar cheese
  • Sour cream
  • Guacamole
  • Tortilla chips

Cook and drain ground beef and season well with salt and pepper.
You are now going to layer the ingredients into a large baking dish. Spread the can of refried beans into the bottom of the dish. Add the ground beef on top, then chilies, and then the salsa. Sprinkle with the cheese and olives and bake at 350 for 35 minutes or until bubbling. Remove from oven and spread sour cream, and guacamole over the top and serve hot with tortilla chips.
This recipe is simple and so tasty!
