What a year it has been! 2019 brought so many moments that were memorable, some great, some just miserable! That’s what life is though, just a day by day journey to get through!
This has been a year I will definitely never forget, it had plenty of ups and downs.
It has brought overwhelming happiness, with the addition of my birthday kitten Geordie into my life and a trip to Poland to meet amazing friends, artists, and my beloved family in Kraków. The purest joy of getting to paint pottery in Poland, and to be healthy enough to take the trip, when I sincerely thought it wasn’t going to be possible after my leg injury. To say I have great friends and family is an understatement! I have the best friends and family on this planet! I am so blessed to have you all in my life. Thank you for being along for this ride.
I love the tradition of New Year and a fresh start! I’ve never been one for resolutions, to easy to break. I do however appreciate the thoughts that go into them, changing a bad habit, working towards a goal. This year my goal is to take better care of myself. So often we are busy taking care of all that is around us, we don’t take great care of ourselves. I need to do a better job of this. This last year has taught me that I am not invincible, that I have limits to my body and mind. Are any of you making a resolution? Care to share what it is?
I’m looking forward to celebrating New Year’s Eve with my husband, carrying on his family’s tradition of an appetizer bar and movies. Neither of us has ever wanted to go out. Being at home, cozy and safe is a great way to ring in the new year for us! I have to work the next morning at 6 am, so it’s also a smart way.
I know I will be making some of Tim’s favorite nibbles on New Year’s Eve, and I will be making an old one in a new way. See if you can tell from the photos which one it is!

Kim’s Stuffed Mushrooms

  • 12 large mushrooms with stems removed
  • 1/2 cup Italian bread crumbs
  • 1/2 grated Parmesan
  • 1/3 cup olive oil
  • 2 cloves of garlic minced
  • 2 tablespoons chopped Italian leaf parsley
  • 1 tablespoon chopped fresh mint leaves
  • Salt and pepper to taste

In a small mixing bowl combine Italian breadcrumbs, Parmesan, olive oil, minced garlic, Italian leaf parsley, and the mint leaves. Add salt and pepper to taste.
With a small teaspoon fill the cavity of each mushroom. Drizzle a baking tray with some olive oil to prevent the mushrooms from sticking, and place filled mushrooms onto the tray. Drizzle a little more olive oil over mushrooms and bake in a 350-degree oven until beautifully browned about 1/2 hour. Transfer baked mushroom into each indentation on egg plate and serve hot.
